Making the Chicken Gumbo Day

Today's project.  Make the gumbo for our Mardi Gras celebration on Sunday.  At least half of the day needs to be set aside for gumbo cooking.

The ingredients:   Celery, onions, peppers, Chicken, Andouille Sausage, Smokey Sausage, Creole Seasoning, cayenne pepper, bay leaves and chicken stock.


Start Time:  8:30 a.m.






Making the roux:




Until it's the color of peanut butter.





The finished product. 







End Time:  12:45 p.m.  As Retired Mountain Man says every morning...Ta Da! 

I say......Whew!  I did it.  My roux didn't separate, it's thick enough, it's definitely spicy enough and I think there are at least 35 servings.
